Summer Fruit Salad

Ok so I went a little overboard with the fruit on my last trip to the grocery store. As I was chopping and washing all of it – which is what I do first thing so it’s easy for the kids to grab during the week – I realized I just had a ton! And then I thought, how yummy and refreshing does a s summer fruit salad sound??

I used a combo of watermelon, strawberries, mango, blueberries and grapes, but you can do ANY fruit you like. The dressing is so simple – lime juice and honey and this combo just sweetens it up perfectly. I topped it with a little lime zest for color and added freshness, but that is optional.

A friend of mine suggested that I add chopped mint next time and I think I will!! This was thrown together fast and was so spur of the moment but I will make it again and try that. The kids devoured this in less than a day. It was a snack yesterday and then they asked for it for breakfast again. For my breakfast, I made oats with this fruit salad on top. SO yummy! I typically do some sort of berry on my oats with maple syrup, but I did not need any extra added sweetener this morning. Yum!! Enjoy.

Summer Fruit Salad

1 cup watermelon

1 cup strawberries, chopped

1 cup blueberries

1 cup mango, diced

1 cup grapes, halves

1 tablespoon fresh squeezed lime juice

1 tablespoon honey

1 teaspoon lime zest

In a large bowl, combine the fruit. In a small bowl, mix the lime juice and honey together. Pour over fruit and toss to coat. Sprinkle with lime zest.
