Protein Packed No Bake Sugar Cookie Bites

So it’s the first week of summer break and that’s not always easy. Getting out a of routine and into a non-routine (truth!) is hard!! For the mom and kids, right?? So I’ve been trying to keep them busy and yesterday, my oldest asked if we could bake cookies. To which I replied, yes!! But then realized I didn’t have any butter. So we searched Pinterest, and she found a recipe I had saved for healthier sugar cookie bars…which is exactly how these no bake sugar cookie bites were invented!

All 3 of my kids LOVED helping me make these. They liked rolling them into the balls, but the best part of course…the sprinkles. I let them go to town! And they are totally optional if you choose not to use them. But I think they look pretty festive and fun to me!

They are good to eat as is, but better chilled. They firm up a bit and the butter extract truly makes them taste like a sugar cookie. Use your favorite protein powder, mine is Shakeology and I’m obsessed with the new Vegan Vanilla flavor. To me, it tastes like cake batter so it was perfect for these treats!! Enjoy!

Protein Packed No Bake Sugar Cookie Bites

Yield: 12 - 15

1 1/2 cups white whole wheat flour

2 scoops vanilla protein powder (I use Shakeology)

2 tablespoons coconut sugar, plus extra for topping

pinch of cinnamon

1/2 cup natural peanut butter

1/2 cup pure maple syrup (or honey)

1/2 teaspoon vanilla extract

1/2 teaspoon butter extract

2 tablespoons milk + more as needed

Line an small baking sheet with parchment paper and set aside. In a large mixing bowl, combine flour, protein powder, coconut sugar and cinnamon. In a smaller bowl, combine the peanut butter and honey and microwave for 30 seconds. Stir in the extracts and pour into the dry mixture. Stir to combine, then start adding the milk by tablespoons until a thick, but not sticky batter is formed.

Roll into balls, sprinkle with coconut sugar and sprinkles (optional). Place in fridge for 30 minutes to firm up and enjoy!
