Dark Chocolate Zucchini Brownies

This recipe was given to me by a good friend and it came from her CSA cookbook. These dark chocolate zucchini brownies are AMAZING!! I’ve made them so often I barely need the recipe anymore. My kids love them and I love that they are chock full of veggies, which my kids know, but they still eat them because they are that GOOD. So thank you CSA Member Anna Santini, wherever you are!!

So not only are they super yummy, but they are super easy!! You’re going to feel like it’s too much zucchini…I think this EVERY time I make them. But they always turn out fabulous. The hardest part is peeling and grating the zucchini. And I actually use my food processor to grate it so again…super easy.

That’s my dog, Beans…he was just waiting to swoop in a steal one while I wasn’t looking. He never got the opportunity. 😉 And now if you’ll excuse me, I feel like I need to go make a pan of these RIGHT now. The funny thing is, every time I make them, I get the stink eye and I hear lots of “these aren’t brownies” as we are making them. But by the time I pull them out of the oven, all the veggies are forgotten about and they can’t wait to eat them…

Dark Chocolate Zucchini Brownies
Yield: 16 brownies
1 cup natural peanut butter
1 1/2 cups shredded zucchini
1/4 cup honey
1 egg
1 teaspoon pure vanilla extract
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup dark chocolate chips
2 tablespoons cocoa powder
Preheat oven to 350 and spray a 9 x 9-inch pan with non-stick cooking spray. Mix all the ingredients together and pour into the pan. Bake for 35 minutes or until a toothpick inserted in the middle comes out clean.
