Chocolate Avocado Mousse

Want to learn how to be super sneaky and trick your kids into eating avocado – which is incredibly nutritious for them in SO many ways? Make this chocolate avocado mousse!! Even my 4-year old, who is my pickiest eater, was licking the bowl clean. Avocados are rich in healthy fats, are cholesterol free and can be used in some very surprising ways to replace higher fat ingredients in recipes.

This is easy and quick! No refined sugars, only honey and vanilla extract for added sweetness. My kiddos loved it with the dark chocolate chips – I used Nestle, which is a lot sweeter at 53% cacao. You can also make this more decadent and grown up by adding a better quality, more bittersweet chocolate (try 72% cacao or higher).

Maybe you can’t get your kids to sit and eat avocado toast (my FAVE!), but I bet you’ll be able to pass this off as chocolate pudding. Avocados are chock full of vitamins and such a great food for our growing little ones. An awesome source of fiber, potassium and vitamins that support a healthy heart, skin and immune system.

Chocolate Avocado Mousse
Yield: 3, 1/2 cup servings
2 very ripe avocados, peeled and pitted
1/4 cup dark chocolate chips
1/4 cup honey
1/4 cup unsweetened cocoa powder
1 1/2 tablespoons skim or almond milk
1 teaspoon pure vanilla extract
pinch of sea salt
Place the chocolate chips in a small bowl. Heat in the microwave for 30 seconds. Stir and if not melted, heat for 10 second intervals until smooth. Set aside to cool slightly.
Place the melted chocolate, avocados, honey, cocoa powder, milk, vanilla and salt in a food processor. Blend until smooth and creamy, scraping the sides of the bowl as needed. Spoon into glasses and refrigerate for at least 3 hours (can be prepared 1 day in advance). Garnish with fresh fruit if desired and serve.
