Avocado Chicken Salad

I have no idea why it took me so long to try avocado chicken salad! It is simple and one of the most delicious lunches I have ever have. I ate it on toasted bread as a sandwich one day, over lettuce leaves and tomato slices the next and it was awesome just scooped right out of the bowl with a fork. Hands down one of my favorite quick clean eating meals.

I also used a rotisserie chicken, which was an amazing time saver. I buy at least one of these a week and use it in things like chicken salads, soups or quesadillas. They are SO helpful for a busy mom!

It lasts for about 3 days and was the perfect amount for about 3-4 lunches. I was the only one who ate it so it was in my fridge that whole time…it turned a little darker, but not brown like you would imagine something with avocado would. Try it and let me know what you think. I was thinking maybe a little cilantro would be a good addition too!

Avocado Chicken Salad
2 cups chicken shredded from a rotisserie chicken
1 ripe avocado
1/2 cup nonfat Greek yogurt
2 TBSP red onion
Juice of 1 lime
Sea salt and fresh ground black pepper
Combine all of the above ingredients, adding the salt and pepper to taste. Serve on toasted bread or over lettuce. Keeps up to 3 days in the fridge.
